Balsamic-Roasted Tomato & Avocado Pizza

Ingredients
1 Feel Good Dough -or- 1 package of Pizza Dough mix (made and cut in half)
1 pkg grape or cherry tomatoes, halved
1/2 - 3/4 cup balsamic vinegar
1/2 cup spinach, shredded
1 avocado, sliced
Prep time: 20 min.
Cook time: 5-6 min. for tomatoes + 14 min. for pizza
Method

If using doughball, thaw overnight in the fridge, or for two hours on the counter. For best results, get the doughball to room temperature before use. For tips and tricks, visit our FAQ section.

If using dough mix, prepare according to package instructions. Use half of the dough for this recipe.

Preheat oven to 400F.

Layer tomatoes on a baking pan and cover with balsamic vinegar. Bake 3 minutes at a time, turning to roast evenly. Remove from oven after 6 minutes.

Stretch dough and place on a baking sheet. Layer tomatoes and balsamic liquid from roasting evenly over the dough and bake for 14 minutes, turning halfway through baking.

After baking, add shredded spinach and avocado to garnish.
