Apple Cider Pancakes
1 package Feel Good Dough Oil-Free Whole Grain Dry-Mix
1 cup apple cider
1/2 Tbsp baking powder
1 tsp cinnamon
1 tsp pumpkin pie spice blend
1/2 tsp salt
1 1/2 cups water, divided
1/2 cup apple sauce
1 tsp vanilla

The Night Before
Mix all flour and yeast together from the oil-free whole grain mix.
Measure out 1 cup of the dry mix and combine with 1 cup of water. Let set overnight to ferment.
Simmer 1 cup apple cider until it reduces to 1/2 cup. Let cool.
The next day
Whisk together the rest of the dry mix, baking powder, cinnamon, salt and pumpkin spice blend.
In a separate bowl, mix 1/2 cup water, 1/2 cup apple sauce, vanilla, reduced apple cider, and fermented mixture. Fold the dry ingredients into the wet. Let set for 5 minutes while you warm your griddle to 350.
Measure 1/2 cup pancake batter per pancake. Cook until bubbles form and then flip (approx. 2-3 minutes per side).
